So I had an idea where a shipping container has standard foam board (4x8 - plywood size) hung with a small 1 inch gap. The roof is then painted with coolpaint. At night when it cools the air can be pumped through this gap and thus move the colder air inside. During the day - the fans can just be turned off. This could be done on each side of the box. Perhaps insulating the bottom with more foam board + plywood flooring.
Although the top one will likely be created once we have a stable paint - the bottom is this.
So the next step in my would possibly a structure like this given by davinci. TBH though this idea is mostly driven by my experience with foamboard. At this point it probably makes more sense to have a traditional building.
